White Pizza with Chimmi Sauce...

Here's a great recipe I just got from Emily Harris Soen (from Inverness and Jackson)...Taste of Gourmet Consultants are sending in recipes using Chimmi Sauce for a Bingo Game we are playing in February... Love for ya'll to send me the way YOU use our Chimmi Sauce - our yummy garlic pesto that makes a great dipping sauce for steak or roast.

White Pizza

1 refrigerated pizza dough
Chimmi Sauce
1 cup mozzarella
Fresh spinach

Press the pizza dough on cookie sheet or pizza stone. Spread the Chimmi Sauce on the dough. Drop several spoonfuls of cream cheese over Chimmi Sauce. Top with mozzarella and spinach.
Variations: Omit the cream cheese to make it less cheesy.
Add artichoke hearts to the spinach topping.
Make it stuffed crust by folding 6-8 string cheese sticks at the edges of the pizza (must use a square sheet for this one).

You make me smile....

Today, a mail order customer from Atlanta really made me smile!  She served our Plantation Pie at a dinner party over the weekend and got asked for the recipe!  What a compliment for her and for us!  Of course, she was sweet enough to say, "I'll do better than that, I'll get you a Pie Mix."  And she did - Her order is being packed to ship right now.

Nothing makes me happier than to hear how much my food is enjoyed!
To hear "ummms" in The Crown when I'm passing bread or on the phone like today!  Making our customers and guests happy is the most important element of our business!  It's why we are IN business and why we have been for 36 years!  Our precious loyal customers make ME smile!

Jennifer is in France...Wish I was!

Our daughter, Jennifer Schaumburg, is on the trip of a lifetime! She was invited on a Rotary Exchange trip to France for four weeks!  Jen was nominated by Indianola's Rotary Club and is with three other young people from Mississippi on this professional exchange!  What an opportunity!

I was telling Laurie Phillips, one of my Consultant friends from New Albany, MS, about her trip today and Laurie suggested I share some of her travels in my blog (so here is a tidbit from her first email!)  Of course Jen's profession is FOOD and the entire life of France revolves around food!   Lucky Girl!

"The food is incredible, the wine delicious and we are having a very busy time! Today I went to a patisserie - you would have loved it!  I watched them make croissants, macaroons......"  Inside a French Bakery!!  I've always wanted to do that! 

I have a bad habit anyway of worming my way into special kitchens to watch the chefs at work!  (Paul Prudhomme's people actually invited me in when we ate at K-Paul's the first time!  And at Commander's Palace, you can walk through the kitchen any time (and linger like I do!)   

I just hope Jen had a chance to shape a croissant ( I know she'll be enjoying dozens while she's there!)  A French Bakery!  Heaven!
