"The Crown in Indianola is one of my absolute favorite places to shop and EAT!...Love to visit with Mrs. Evelyn, the owner, and her daughter Jennifer when I go in there!...oh and Mr. Tony (Mrs. Evelyn's hubby) is pretty cute too! :) I call Mrs. Evelyn the "Paula Dean of Mississippi"...except Mrs. Evelyn is MUCH more of a Southern LADY than Paula...Mrs. Evelyn is very sweet, calm, cool and collected!
Whenever I make something from her cookbook, Classic Catfish from The Crown at The Antique Mall, (if you don't have this cookbook in your collection, GET IT!) it never seems to turn out quite as good as what she serves in The Crown! It's just something about going in there and eating with all the antique stuff and southern charm, I guess, that makes it taste so much better than what I make in my own kitchen!...Oh well, that's just a good excuse to visit there more often, I guess...But for those wanting to know about Catfish Allison, here's the version I had for supper tonight...And as always with recipes, I changed a thing or two about it...That's the fun!
Oh! and I ALWAYS visit The Crown before I have a party at my house!...They have THE BEST mixes and sauces for hors d'oeuvres and desserts!...along with cute napkins and stuff I think I can't live without! :D

Recipe for Catfish Allison
about 6 catfish fillets (I always keep frozen catfish filets in my freezer)
1 1/2 cups grated parmesan cheese (I just buy the bag and dump the whole thing in)
1 stick of butter, softened
6 T mayo
several dashes of Worcestershire sauce
a few dashes of Tabasco
Mix all ingredients in a bowl, except fish fillets. Set aside. Poach the fillets for about 5 minutes in simmering water. Carefully remove and transfer to a large pan that has been lightly sprayed with nonstick cooking spray. Place dollops of mixture from bowl on top of catfish. Broil in the oven for about 3 minutes.
Fish can also be broiled in individual au gratin dishes...The mixture can be refrigerated ahead of time and used the next day or so, when you are ready to broil the fish...This is why it could be an excellent dinner party dish served over rice...and Uncle Bens is the best rice, in my opinion! ENJOY."
