Even though it is still 96 degrees....I just KNOW that the Fall is coming! After all, Sage and Prescott are already back in school and I'm feeling the need for comfort food! It's kind of like buying new notebooks for school...I still want to get "school supplies" this time of year...and get my desk reorganized....and enjoy my favorite comfort foods for supper!
It's unbelievably hot outside...but I making Southwest Soup for supper! Using every little "leftover" piece of roast that I put in my freezer "soup pot" this summer! It's going to be a BIG pot of soup!
Do YOU keep a "soup pot" going in your freezer? You should! It's a wonderful way to use up leftovers! We eat roast beef a lot and there's always a little left with some good juices! Sometimes it gets sliced onto a salad..like I did last night! But usually I just pop it in my pot in the freezer with the juices from the roasting pan and use it as my meat the next time I want soup! Flavors are great and it's BONUS!
I also add the last spoonful of peas or corn or slice of tomato....Southwest Soup mix turns all those good "bits and pieces" into a fabulous vegetable soup! Add a loaf of Bayou Beer Bread and supper is true Mississippi Taste of Gourmet Comfort Food!
