We served a new Southwest Salad this week at The Crown.....really pretty and VERY popular! Spicy grilled chicken slices with black olives, corn, corn chips, black beans, tomato, cheese and a homemade Chipotle Ranch Dressing to tie it all together!
I make my own "version" of Ranch and I love it (second to Vidalia Onion of course) and for this salad, I just added 1/2 teaspoon of our Chipotle Sauce for 1 cup of Ranch Dressing....I like it smokey and a touch hot...but not blistering! So good and so refreshing! The Salad was a hit this week and we'll have it again in a few weeks! Today'sFruit Crumble was just peaches and it was more than yummy! Dessert Alert........Apple Crumble on the Dessert Buffet for Saturday!
The Indianola Open Air Market is going strong at the B.B. King Museum on Saturday mornings! Fresh vegetables are so wonderful this time of year and just visiting at the Market makes a good outing! Local Figs have been a great favorite of mine! Enjoy cooking something yummy this weekend!
