Yummy Sweet Potato Muffins....

I have Sweet Potato Muffins on the brain right now!  I made some at breakfast this morning, had one for a snack a little while ago and I"m going to make Sweet Potato Pancakes with the rest of the batter tomorrow morning when Sage and Prescott come over!  That's right......the batter HOLDS perfectly in the refrigerator so you can have a few at a time for several days!  (Try the pancakes for sure!)
