I have to tell you what we enjoyed so much last night! White Chili.....made with some boneless chicken and white beans of course. I cooked my own white beans (from a pound of dried great northern beans with very very little salt.) Just before I spooned the chili into the bowls, I put a big handfull of fresh spinach in the bowl, then topped that with brown rice and spooned in the piping hot White Chili! It was sooooo good and hugely flavorful and so healthy! No fat in the meat, brown rice with all the vitamins intact, beans and rice combination that is the "perfect food" and fresh spinach with all the nutrients! Yum!
And I have at least 3 more "bonus meals" set aside in the freezer for the two of us! I'll just heat the White Chili and cook a little more rice! Supper doesn't get any better than that!
Oh, what am I going to do with the left-over rice? Well, I'm going to make my grandmother's Rice Pudding with it tonight! So what if it's sugar and milk and eggs....who cares! It's wonderful and warm and reminds me of sitting on my Momo's kitchen counter stirring up things with her! My ultimate comfort food!
Oh, and there are TWO of the mixes in one of my boxes of White Chili! Talk about economical! Try it!
