Try a couple of these ideas.....almost no cooking and no oven heating up your kitchen!
We've really been enjoying the fresh vegetables from the Indianola Open Air Market....Last Saturday morning I got everything from Japanese eggplant to okra to fresh cucumbers to yellow squash and fresh tomatoes! The Market is at the B.B. King Museum in Indianola, from 9 to 12 every Saturday morning - with live music and fresh baked goodies! You don't want to miss shopping the Market!
Deanna's Tomato Salad - fresh tomatoes from the Market - of course
Chopped fresh tomatoes
Fresh garlic - peel and crush with the side of your knife and a little salt to "liquidize" the pieces
Fresh Basil - a few leaves broken into small pieces
Salt to taste
That's all there is to it! Mix everything in a bowl...let it sit at room temp for a while and enjoy! Bread sopping up the juices in the bottom of the bowl is surely good!
Cucumber and Onion Salad - one of my long-time favorites!
Cucumbers sliced thin - leave the peeling on
1/2 to 1 cup white vinegar - just enough to almost cover the cucumbers
1 to 2 packets of Splenda
1 small onion (or several green onions) sliced thin
Put everything in a bowl to mix and toss to cover the cucumbers. I let it sit at room temp for a while and then refrigerate what we don't eat that night! You can make enough for several meals and just keep in the Fridge! So good and so light!
Crock Pot Meals - I know this isn't a recipe....but they are so wonderful for the hot summer! My mixes only take 3 minutes or so to pop into a Crock Pot...put on the lid and head to the swimming pool or the mall for the day! Supper's ready when you get home and there will be lots of leftovers for later in the week! Last night we had Tuscan Bean and Pasta Soup! I threw in some frozen meatballs instead of ground beef and added a handful of fresh spinach at the last minute! So good and so satisfying!
