Since I consider Sugar to be one of the major food groups, there's not much that's TOO sweet. So when I decided to make the Apple Cake with pumpkin, I cheated. Instead of the 15oz can of pure pumpkin, I bought the 29oz can of Pumpkin PIE FILLING! I used half the can and it came out even more moist than the original version. It became very much a cake, and now my mother loves it this way with powder sugar glaze on top! Because sugar (just like butter) is our friend!! :)

Laurie - I also TRUST butter and sugar...I know "what they are" and we eat them with CARE...knowing moderation is essential! People can easily overdo anything - especially if it says sugar free or fat free! The Pie Filling variation shows that you can make a "pumpkin bread" with a heavier textue or a "pumpkin cake" - great suggestion! Thanks!
