At the Crown, catfish is prepared every way but fried, and Taste of Gourmet food products are served on the menu and available for purchase in the adjoining retail store. And sometimes the broth is optional! During some of my pregnancies, swelling was an issue and I was told to cut way back on sodium. So when I made the soups (for my family - not for sampling) that called for broth, I just used water. And it was still delicious because of all the great seasonings and spices already in the mix!

Using just Water will work perfectly in many of the mixes Laurie! Of course, I love to make my own broth at home - fresh - using chicken wings or roasted chicken or turkey bones - then you have meat flavor with little or no salt! Keep it frozen until needed! When we cook chicken for chicken salad at The Crown, we strain that cooking broth and use it in our Broccoli Cheese Soup and Gumbo! Your ideas are always great Laurie - Keep cooking and sharing!
