Chicken Curry...at The Crown

That's right...one of our guests asked if we could serve East Indian Curry this week at The Crown and we LOVE to grant wishes!  I think it must be Eric Fare's favorite dish - or one of them! 

Last week our Special Dish of the Week was Creole Catfish Cakes and we made LOTS of people really happy!  Including me - I ate them every single day last week!  This week it will be the Chicken Curry, softly spiced over rice topped with toasted almonds!  Yum!  Come for lunch at The Crown!  Or buy my Mix and cook it for yourself!

More Cool Suppers...

East Indian Curry is another one of my very Simple Suppers and economical too!  Just put 3 lbs. of chicken, boneless breasts or thighs in the crock pot with my mix, a can of tomatoes and water!  Turn it on and you'll eat like an Indian Maharajah for supper (we say eat like a KING in Indianola!)

Serve it over the rice (that comes in the box) the first night, then freeze the Bonus curry and serve it again in a few weeks!  Cooking like this - with freezing in mind to begin with - makes good sense!  You are using your time wisely and feeding your family GOOD healthy food packed with flavor!

Do you THINK you might not like Curry?  Try it! My Mix is not hot and spicy with peppers!  It's aromatic and softly spiced!  Little people love it too - and the recipe for Curried Chicken and Artichoke Casserole on the box is quick and yummy and it freezes too!  You can have two completely different meals from the same box and the same cooking time!  And only 3 minutes to put the ingredients into the pot!  You can't beat THAT!

Supper is Simple!

REALLY Simple!  Supper tonight is our New Orleans Style Beef that's been simmering in the Crock Pot all Day!  And smelling GOOD!

There's a secret though!  Use 5 full pounds of beef roast!  I know it's a lot of money - especially now with the rise in food prices!  But your Mix will deeply flavor all that meat and then what a bargain it becomes!  Even families with teenage boys are going to have leftovers (I mean Bonus Meals) with my New Orleans Beef!

Divide it into servings to fit YOUR family, put it in the freezer and enjoy several more meals served over noodles, grits or more rice.  (Did I tell you rice comes in the Mix box too?)

Just cut the roast into cubes, pop it into a crock pot with a can of tomato sauce and 2 cups of beef broth!  No heating up the kitchen and the "gravy" is scrumptious. Even the toughest cut of roast (or venison) will get tender and flavorful with the onion, bell pepper and celery in the mix!

Don't buy stewing beef already cut up - just buy what's on sale, cut it up yourself and enjoy every bite when you use my mix!  I can make YOUR Supper Simple too!

It's Delicious....AND...

Yes, I know I "talk" a lot about how delicious our Foods are!  Today, one of my Consultants, Lari Boswell, TN, made me realize that I don't "talk" nearly enough about  how simple it is to prepare our Taste of Gourmet main dishes and FREEZE them! 

Lari had a Tasting at a company with lots of busy women who really need our simple meal preparation and appreciate our quality.  Here's part of what Lari wrote.  "I did several soups and I did the Mama's Meatloaf, too. That's always a challenge to leave enough for a Tasting after I cook it. It's delicious!  And the women were amazed that most of the stuff I served them had been frozen. They couldn't believe how moist it all was."

You can cook and freeze a week's worth of delicious meals in just an hour or two when you use our simple mixes!  And you have quality, freshness and good nutrition!  With a few staples in your pantry, like canned tomatoes and chicken broth, you are ready to get some pots bubbling! 

I pulled some Black Bean Chicken Chili (very low fat by the way) out of my freezer last week, cooked some rice, topped it with my Chili and had a fabulously filling, healthy meal!  The Chili had been in the freezer for weeks, and I really needed a fast supper that night!

Happy Father's Day..

The "Fathers" in my Family are a precious part of my life and I cherish them all!

Tony Roughton is just the best Daddy and very best Grandfather EVER!  Of course I'm very prejudiced but he IS!  Our son Kevin is the Father of two precious little people, Izabela and Carter, and a tower of strength and love for them and for Deanna! 

My memories of my Daddy and both of my Grandfathers stay very much alive in the stories that I share with Sage and Prescott when we are in the hammock on the lakebank.  They love the stories and I love talking about these wonderful men.  My mama used to say that I exaggerate when I "tell a story" but loving memories are worth a little embellishment!

Happy Father's Day to the precious men in your Family!  We'll be celebrating on Sunday with Tony's favorite foods....Chipotle Pork Loin with sweet potatoes and Creme Caramel for dessert (with just a swish of my Fudge Sauce on top.)  Food is always a gift of Love!

Remember when I told ya'll that we had a visit from the writers and photographers from Bon Appetit?  Well, the June issue includes The Crown Restaurant in their fabulous article about "eating in the Mississippi Delta!"  You've got to get the magazine!

Our Mississippi Delta Fudge Pie is pictured and described as one of the "richest desserts" in the U.S.  The writer, Liz Welch, remembered our Fudge Pie from previous visits to The Crown!  She said, "Unable to choose among the Delta Fudge, Coconut Macaroon and Lemon Chess Pies, we have a sliver of each."  They definitely KNOW how to eat!  (Actually lots of my guests at The Crown do the same thing and I encourage it on my menu!  Taste all my desserts!  I love that!)

You've really got to read the article fully and keep the copy handy when you are traveling anywhere in the Delta!  For example:  This Friday night, June 6th, B.B. King will be at his Homecoming Concert here in Indianola!  Get in the car and come see B.B. live in the park and eat lunch with us at The Crown!
