I should have told you that on Thursday night, the night before delivering my 9lb1oz Pearce, I made Spinach Manicotti (ricotta, mozzerella,Parmesan, 1 egg, a spoonful of CHIMMI SAUCE and 1pkg SIMPLY SPINACH DIP MIX! - stuff it in some pasta and bake with tomato sauce) for my sweet hubby! I was hurting some (not in active labor yet) and I needed to get my mind off of it. Plus I knew it might be the last hot meal he got for a little while! He was impressed and it made so much we've been able to eat the leftovers now that we're home!

Now this is a woman who loves to cook and "takes care" of her family! Laurie's boys will be giving her hugs and kisses on Valentine's Day - She'll probably bake them a Mississiopi Mud Cake!
