Last week at The Crown, we served one of our customer favorites, Creole Catfish Cakes. They are very much like a crab cake - crispy on the outside and soft and flavorful inside, using U.S. Farm-raised Catfish of course. The secret ingredient (which isn't really secret) that sets the Cakes apart is the Sauce we serve drizzled over the top of the Cakes!
It's one of our Taste of Gourmet recipes using our Suddenly Salsa Mix! Prepare the Salsa as normal using a 28 ounce can of crushed tomatoes (how easy is that!) Then mix equal amounts of the prepared Salsa with Peach Jam! Stir it up well and drizzle it over Catfish Cakes (from my recipe book, Classic Catfish) or grilled pork chops or chicken breasts or even slices of Mama's Meatloaf!
Use it as a dipping sauce for fish sticks or chicken fingers for the kids! Or just dip into any "bonus Peach Salsa" with your favorite tortilla chips! Suddenly Salsa is one of our all-time best selling dips and it keeps so well refrigerated! It's one of our mixes that you need to keep prepared and in the fridge always!
Another one of the "Must Have at Ready" products is the Garlic Herb Dip! I'm using the Garlic Butter recipe tonight on some steamed fresh green beans! YUM! More about the Garlic Herb Butter later!
